Cause to play at Idra's level you need to practice like 8-9 hours a day. A lot of players can't do that after college etc, etc.
Edit: Not to mention that he USED to play 12 hours a day during his Brood War training.

I'm kind of surprised the protoss players haven't utilized sentry immortal more effectively. Should be a pretty easy adaptation since the beta was filled with that type of play

Except he wouldn't have been, since HuK had been pulling probe production to keep up. Had he been repelled, they would have been even.
