Galio and Ahri are good strong, safe picks. Annie is super fun and still pretty strong despite her unpopularity. TF is good to learn, but harder because if you can't reliably pick Gold Cards, your effectiveness decreases quite a bit.
Swain is also very strong now. He's got a different playstyle than most other mages (sustain damage instead of burst), but he's definitely a good one to learn.

Afaik, there have been some additional changes not listed in the Patch Notes which are the cause of these errors.

Morgana is a safe choice since she can farm well and has very strong teamfight thanks to ult and you can make some clutch plays with her bind and shield. She's my go-to AP Champion since you don't need to be terrible good at mid lane to still do a good job with her. Just a reasonably good understanding of what to do in teamfights and roaming. She doesn't have too many counterpicks and generally devolves any lane she is in into a farm lane (similar to how Galio turns lanes into farm lanes).
If you're looking for some ability to outplay people, CassiOPeia is worth a shot. I hate her so much. And if you just like farming and then suddenly turning up in the middle of the game and picking up kills all over the place, try Karthus. Skittles farm all day and then press R. (Ok, he's more difficult than that. But yeah.)
If you want to play more assassin-y type champions, then you could try Kassadin or Leblanc. They also have counter-pick potential but they're also more niche. And if you really want to be a jerk, go RoA-stack Kassadin. I'm sure Utah can tell you all about it.

Fizz, Malphite, Lulu, Zilean, Akali are the mids everybody should learn.
Which brings up my next point, Malphite rocking mid: QQQQQQQQQQQQQQQQQQQQQQQQQQQQQQQE, 150 cs later RWEQ win or lose. Kennen is actually good mid, he can't be countered unless your top decides to pick early for whatever dumb reason.

Oh yeah, definitely learn Morg too. She's one of my least favorite to play, but she's EXTREMELY safe.

Imo a must-know champ, but often banned (for the wrong reasons) in lower elo. Ryze has beast lategame, and still a decent laning phase. The only hard thing about learning him is choosing the correct build (so many people screw up on this), but his skills are very straightforward, no skillshots. Annie smashes faces in. Also pretty easy to learn.
I would go with those three if you don't want to go too in-depth about midlane.
Also, if you already know you are uncomfortable with a champ, chances are you're not gonna get good results with him either, so I'd say leaning them is a waste of time.

The other night I went RoA out of habit on her, but I do like it. Her early power level is good enough that she can afford to get the RoA, imo, and then once you have DCap and RoA has had time to build up, your late game is even stronger. I want to start playing her more because she is hella fun.

I still do boots 3 into triple dring cap. But every so often I'll grab a kage's and rush to dfg depending upon lane opponent.
If you don't anticipate being able to net any kills in lane, going for RoA isn't bad though.
edit for clarification: If going into kage's, don't go for 3 drings, only 1 or 2 depending upon opponent. After cap then dfg unless you feel you really need the cdr for some reason.

I don't play annie, but I feel like drings --> cap is better since mana management with incinerate is so easy, and she doesn't really need a mana buffer much larger than her full combo.
edit: and DFG is always the more baller choice
