If you can stick with it, the manga series gets a lot more serious and a lot more shounen action oriented. The first couple of chapters were basically pure joke parody, but they actually decided to make it a real story by the 2nd to 3rd Servant card. And the "catch-em-all" vibe goes away around the same time...namely because there's only 7 Servants and they already had 2, and secondly because the Servants are the same as the Fate ones, meaning Saber and Berzerker....
It's still a lot more comedic that the original Fate verse, but the story actually comes into its own fairly quickly. And if the anime adaption continues to Part 3 of the manga, it almost completely breaks away from Fate/Stay Night (and gets a lot more epic).
