Problem is that even after she decides to live normally she keeps her incredulous zealotry about chivalry and fairness and such to the point of always disdaining people who don't conform to her truth. Her emoness just added to the absurdity of what she demanded, given that she wanted to "make it like it all never happened." Destroying the grail to live a normal life doesn't mean anything except that, in a not-so-rosy-glasses view, just means she stopped fretting over the past. Which is fine, people don't need to keep carrying their past. But that doesn't mean she's changed any of her ideals or anything. She's just acting like a king, while no longer claiming to be one. Which, I guess in one way is progress, in another way makes her still insufferable.
Granted F/Z was written after F/SN so the level of development of Saber as a character (esp. given how Nasu's writing wasn't as refined then) is debatable in any case, but the idea is that she has the attitude of some ideal king while wanting to renounce the position. She never really was intent on living on as said ideal.

Aozaki sisters I don't think grew at all, they just keep extending on their projected path without regard to others. And Gilgamesh.... he just want whatever he want and then want some other stuff later. Same character all across pretty much.
Ciel has some real growth but obviously no one ever care about her. If you ignore the journey and look purely at the end result, maybe. The process in Fate was horribly contrived. Saber's character image is honestly just as fucked up as Kohaku's by Melty, and that accomplished even without needing Hollow.

Because other than those two (one of which is entirely justified because Kiritsugu is a dick), Saber got long with practically everyone she met, other than her enemies (who she is supposed to not get along with).

Melty Blood after Tsukihime, actually pretty good storyline... and fun. Problem is you need play a lot version to get all the storyline... not sure if there story translation only.
Kagetsu Tohya, which is a fan disk for Tsukihime, not sure if it has eng trans or not though.
KnK LN, but movies do a fairly decent job (except Oblivion Recorder... wtf happened there??! They might want avoid the actual story because it was pretty dark, but they already went there with Fujino).

Just finished watching Toradora!. It's not too bad, though it does have some moments. Some things aren't wrapped up in the end, though for some people it could be better if they aren't. It had a few great moments, both funny and dramatic, and the mix gave it a nice feel (at least for a casual anime watcher like me). It brings up some possible "deep" topics, but doesn't really do all that much with them, but that's not really a bad thing, as it instead just continues going along with its story. I'm sure that most people are used to it by now, but it has that anime dialogue where you think to yourself "I don't think I've ever heard anyone talk like this, and I don't think I ever will", but it's pretty easy to get used to. All in all, it was pretty enjoyable, kinda fun and had some sad moments (the good kind) making it a pretty good anime to watch.

Azumanga Daioh Honey and Clover Utena Nodame Cantabille (I havent gotten around to seeing it and I dont really care anymore but its pretty popular so Ill throw it in anyway)
They have a fair bit of good shows going for them, the just tend to screw up alot of stuff that happens to have really good source which is one of the reasons they get so much hate.
Other times they just do bad stuff period. But its not all doom and gloom, although if you go back a few years its all been downhill for the most part.
