I can see why people may find Chitanda annoying but I also think she's pretty cute. And I guess without her curiosity, there would be no story seeing as how lazy Oreki is. For Sankarea, I'm just glad there's a romance comedy (not many out lately that I was interested in) without a tsundere as the main love interest

The vast majority of shows on a seasonal chart have godawful descriptions that aren't indicative of the show's quality anyways, so giving any show a 2-3 episode tryout is well within reason.

It happens but it's difficult to keep watching if it's too bad. I even imported the japanese version of Catherine because of the awesome voice actors.

It's hard to find out what a series is like just from the basic description on the Season Chart, and if you try to research it too much you risk spoiling too much. So when there's a lot of different series to choose from, things like the voice actor, animation studio, etc. are just things you can use to decide which series to watch the first few episodes from before finally making a decision. Of course, if it's genuinely not very good you'll drop it anyway (I'm looking at you Seikon no Qwaser).
Although so far, watching stuff with Shizuka Itou in it hasn't gone wrong.
