We dont have specific details on either of them.
I'd say Theon still has his balls.
Varys on the other hand...I seem to recall a scene between him and Ros where she reaches for his crotch, and she clearly touches a flat area. I'd assume he literally has nothing down there.
Also, this brilliant scene:
And this one!
"Tell me, does someone somewhere keep your balls in a little box?"
Definitely have to rewatch everything sometime.... I missed so much when I first watched through the show, especially lore.
e.g. I randomly watched a season 2 episode this week when Tyrion pulls the trick on Pyrcell, Varys and Littlefinger to find out who is working with Cersei and in their conversation afterwards she asks Tyrion if he's crazy to marry her daughter off to the Martels because they hate Lannisters. Thought that was a cool thing considering that awesome dialogue Tyrion and Oberyn had in the current ep :D
I definitely want to rewatch season 1. I blew off a lot of the dialogue when Ned Stark was still alive because I thought it was all just fluff. The Varys and Illyrio scene is especially crazy after watching season 2.
Tywin's order to kill Elia Martell and her baby would have required quite some foresight. Considering that at the time Cersei Lannister probably wasn't married to Robert Baratheon yet. And Geoffrey wasn't born yet. And Robert Baratheon wasn't dead yet.
I understand that if Elia Martell's son wouldn't have been killed, he would have been the rightful king.

It's entirely possible he did it expecting carl drogo to react the way he did, and start an invasion. Even if the assassin had done his job, the reaction would be the same (or worse). It didn't quite turn out as planned tho..

Wich made no sense. In the scene with Varys and Illyrio they both seemed to support Viserys/Khal Drogo/Daenerys invasion, but later same season he sent an assasin to kill Danny...
iirc jorah also received a letter, probably warning him about what would happen
