It was likely a real thing for longer that we were aware and people just assumed it was something else. The rise of super processed foods across the entire market has made it worse. I wouldn't blame people for it, gluten can really jack them up if they eat it.

That's not really it. There is stuff like celiac disease, where it has always been a problem and it's pretty obvious how it works, but other stuff that falls into "gluten intolerance" with far less obvious symptoms, no known cause and an unsurprising increase after the rise in popularity of "gluten free".
Eating wheat isn't something new. You can't put the blame into processed stuff.

I think im just bitter I made some super legit french onion soup for the birthday of this cute girl and she wouldnt eat it because of the toasted olive oil and rosemary baguette croutons. I spent 4-5 hours making stock from cow bones god dammit.

It's celiac disease. It's not quite the same as an allergy or intolerance, but for most people it's basically the same. Gluten is 100% fine for a normal person, but for some reason people started thinking that gluten is unhealthy or something when it only really matters for people with celiac disease. I guess one good thing to come out of this is the availability of gluten-free foods for people who actually have celiac disease.
But yeah, if you're going out of your way to get gluten-free foods and you don't have celiac disease, you're a fucking idiot.

gluten intolerance only occurs in less than 2-3 million individuals in the united states and it's not bad for you idk how a protein can make you fat
only reason why gluten free shit started popping up was because the government passed a law a year or two ago to allow manufacturers to place it on a label
