Okay, off the top of my head:

- Bart goes on exchange to France, Homer gets an kid who tries to steal the blueprints of the nuclear power pant.
- Simpsons go to Japan
- Salma (or her sister) adopts a Chinese girl
- Homer gets abducted in Brazil
- Simpsons go to Canada (horrible episode -_-)

there's the episode where the germans? I don't really remember if they were german, but they take over the power plant when they buy it from mr. burns, and they try to run the plant using their ways and such. it turns out going horribly and they resell the plant back, not really sure if there's much positive to use in the episode, but there may be something in there.

unfortunately I can mostly only think of negative things.

He then sleeps on the couch while his house is on fire, and the volunteer fire department composed of people of many religions such as Apu and Krusty (which are kind of inherited from their ethnicities), come to save him.

anything apu is a gold mine to write about, and i think there's more to glean there than any other character or episode. i'd focus on how the show portrays difference as difference without judging it, sort of that different cultures/ethnic groups are not the same as others and that's absolutely fine in the simpsons universe

actually apu was the top bachelor at some fire-fighters fundraiser. he enjoys his bachelorhood but receives a lotus in a letter from his mother. he fakes that he has a wife in america and his mother surprises him by arriving to see her. so thats where the fake marriage with marge came from.

It would probably be best to take a few episodes that seemingly make other cultures look bad, but show how they actually put them in a positive light. In other words, they initially show other cultures in a way that a typical "intolerant" american would view them, but then turn that around.

Taking an episode that is overall positive can simply be countered by an episode that is seemingly negative.
