Most pros can easily play on medium/high if they wanted to (and a lot do), but when the game looks a particular way it can throw you off if it looks different.

1. HTs are 75 minerals cheaper and 25 gas more expensive than DTs which is arguably better.
2. DT tech is expensive and most of the time you probably need to do at least some damage to justify it which makes it risky. Also HT tech is much more useful for late game. If you get a dark shrine you will probably need to get templar archives later on anyway.
Keep in mind I'm not an expert.

Also they usually build Zealot/Archon, and they want to use the minerals of zealots and not for the Templars. As the HT cost less minerals then DTs you can build way more zealots.

75 minerals must be less than 25 gas  I think the resources were in 1/4 ratio in favor of the gas.

Chargelot/Archon is more effective with HTs - you need tons of minerals for chargelots and tons of gas for HTs.
Overall, HT-archons cost 100 fewer ressources (2 x 50/150 compared to 2 x 125/125), which makes archons from DTs only viable if you are either really gas-starved or go for a follow-up-push after DT-harass.

I suppose it varies depending on how many workers you have and what you want to complement your archons with. Zealots are probably a better idea than stalkers are so you might need more minerals rather than gas.

Thanks for the elaborations. I guess, I must get more used to making templar archives instead of DS. I don't have this habit, because against more aggressive opponents, going for storm tech is almost certain loss.
