I just upgraded from a EVGA GTX 460 1GB to a 2x GTX 580 SLI Build over the Boxerday Week, previously, running Windows 7, I saw very little FPS drop under load (many units battling on screen).
I had most settings on Ultra with my 460, and in the heat of battle with maxed out armies on both sides, my FPS would drop to 45~.
Your OS is the issue, also, that 500W power supply you're using is very very very slim line for that card and set up, you're computers wall draw is probably close to 450W under load at the very LEAST.
That card suggests a 600-650W Powersupply when taking into consideration a full system setup. And I'm not pulling these numbers out of my ass, I have a Electric Draw Meter on my power bar, and under load with my 460 it would normally read 550-600W draw from the wall.
That PSU will do the job, especially after you stop running wine and actually install a partition of Win7. But you will be stressing your PSU to the max, of which i high suggest you do not do if you've ever seen a PSU melt down before. (It's not pretty.)

Alright. I can actually get a cheap copy of windows 7 via my sister in university, so I think that's what I'll do for the sake of playing on ultra.
Regarding the psu, I would be able to ship mine back to newegg and get a better one, since I still have that 30-day refund thing. My graphics card box says a 450w is the minimum for this card, though.

Yeah, a Phenom II X4 doesn't really pull power in the league of the i7-980x @ 4.13 GHz (though still accounting for the GameXStream's about 80% efficiency, Platypus' numbers look a little strange--maybe inaccuracy on a cheap meter due to a strange input waveform?). 300-350W seems like a decent estimate for the OP's system at full load.
Out of curiosity, what was the exact PSU model? If it's garbage, it may decide to blow up one day or damage components even under what should be a reasonable load. An old 3.3/5V-heavy 500W design may not like a modern 12V-heavy 300W load also.
Regardless, the PSU shouldn't be causing performance issues--that's WINE's issue, as confirmed already in this thread.

AMD CPUs pull a lot more power than you think mate.
Also, I have upgraded my PSU for my new SLI set up...

I have virtually the same computer as you and I run at 60 fps all the time. In some cases when I play team it takes 2-3 mins to get from 20 or 30 fps to 60 but I always get to it no matter what and i play on ultra. When I played with extremes graphics on PTR i actually had 65 fps all the time with 40-45% cpu usage.

Those are just the TDP numbers, which aren't exactly the max power consumption figures. Intel is more often conservative setting the TDP, putting it higher relative to actual power consumption relative to how AMD does it in general. But his i7-980x is overclocked significantly, so it's exceeding the listed TDP easily. Also, he has a high-end X58 board. Still, his numbers seem fishy unless he has a whole lot of hard drives and the voltage is set really high.
If you look around reviews for the GTX 460, you see figures like 310W for the whole system running FurMark (so the GPU is stressed far beyond what it would require in a "real" program) compared to 160W idle. That's AC power consumed from the wall with the typical overclocked Core i7 test system, so if the PSU is 85% efficient, it's only about 263W DC at load to the components. With a full CPU load on top of that, your Phenom II X4 system is probably not going to get above 350W DC (non-overclocked).
For the record, some Rosewill PSUs are pretty decent, but that one is borderline. These are side issues, but it's not 80 plus, doesn't have APFC, etc. It's only 31A on +12V (372W), which is fine if that's a legitimate rating at continuous power with a reasonable temperature. If that's peak power, there still shouldn't be a problem, but it'd be iffy. Just don't run prime95 + FurMark all day. It's probably not worth returning unless you'd like something better or more peace of mind.
e.g. Antec Earthwatts 430D ($55 - $25 MIR, expiring soon, with free shipping). Despite being 430W--nominally less than that 500W--it has 32A on +12V (384W) continuous, is 80 plus bronze, and has a 3 year warranty instead of the 1 year on the Rosewill. With rebate it costs a lot less too. If you don't like rebates, there are other options too.

I have no experience with AMD, but my rig (i7 920, gtx470, 2HDDs, 6GB RAM) pulls 230-260 watts when I'm playing crysis.That's according to my backup battery which the computer and 1080p monitor is plugged into, meaning, the monitor energy is being counted too.

It IS the fact that you are not running a Windows platform. If you ran that game in Windows, you would get a ridiculously smooth frame rate.
