Straight-up salaries aren't as great as they used to be, mostly because of rising living costs and they haven't risen to meet them, and I know most places now in Beijing actually require you to have certifications and qualifications to be a teacher, unlike years ago when you could show up with a white face and get a job instantly. I heard it's harder to get a English teaching job if you're chinese, and they usually prefer white dudes instead, is there truth to this? It took me 3 months to find a job, even after being in Beijing in person. Most of the job offers want you to send a photo with your offer (many asking specifically for white women for whatever reason?) for this reason exactly. I was lucky enough to sign on with an international company that also hires local chinese staff, so they don't mind expats looking like me, but the difficulties are all you heard and more, chinese people are racist as hell.

It's not a myth, but it depends on the airflow in your kitchen really. If the juice from the onions is getting into your eyes it makes you cry. If it's not you won't! Science.

Alright. I figured as much. I heard all these stories from family friends and some news article so I had no idea how bad the situation was.

A tip if you are cutting a lot of onions (like, restaurant amounts) is to have a pitcher of water to dip the knife inbetween each onion.

I've never had a problem and I use a meat cleaver for most of my cutting because honing/washing/drying my chef knife for quickly chopping a few things is cumbersome
