I don't think you're supposed to be able to cancel it. But today in a game I somehow canceled the teleport. I think you have to immediate spam right click after you start the teleport channel. It's not intended behavior though so canceling Shen teleport isn't reliable.

This is the reason for Trundle's comback imo. Yes, the buffs were nice, but people just forgot that a Trundle can straight up 1v1 or 1v2 anything in the game at pretty much any point if they stand on his field when he ults them.
Shy and Trundle are the champions of "I'm a big ball of stats and I will fuck your day up if only I could catch you man come back here".

Pros reliably cancel their ult when they only want to give the shield. There is a way but I don't know how.

My LoL knowledge isn't exactly what I'd call up to snuff anymore.
As far as pro scenes, the secret is to not bother with NA/EU. Especially for DotA, but also for LoL because the volume of poor games between bad teams is way too high. By volume of games, I probably actually spend far less time watching Chinese DotA/LoL combined than our staff LCS writers do following NA/EU LCS.

really? I've literally never seen a single pro match where the pro intentionally canceled their ult. I saw Wickd do it once, but he said that it was unintentional.

This is something that's happened to me a few times but I've not replicated it before. I'm gonna try and do what the the most upvoted comment says and spam the fuck out of RMB as the ult ends.
This is also another thing where a lack of a sandbox mode or something similar really sucks. Trying to learn this skill, if it can be learned, takes so much gad damn time what with the leveling Shen to 6, waiting on cooldowns, etc.

Test mode and Combat Log are two things I wish LoL had.
I don't even know why there isn't a test mode, since I'm pretty sure Riot has to have one they use for internal testing. Combat log there's also definitely one internally--so they just need a way to filter data that shouldn't be visible to a given player.
