His attitude, his appearance, his carefulness and his resilience to show his Bankai (together with Shinsui), his long white hair. All attributes that you would expect from a true "Jezus" or "God". My initial theory was that Ukitake was the Soul King himself, hidden in plain sight, but that got disproved a couple of chapters ago when we saw the real Soul King.
