It wasn't that the anime got cancelled. The anime caught up to the manga really quick.
So the directors did not want to make fillers.They cancelled it at the moment and decide to let the bleach manga progressed much further before they start to continue to restart back up the anime.
Naruto is okay at the moment.Bleach is looking better actually(The FullBring Arc was total bullshit and a waste of time.It was totally just meant for Ichigo to regain his powers the author could have done it a bit differently).The current arc for Bleach looks much better and the pacing for it is good.
Though, the best is still gonna be One Piece.The storytelling and plot of One Piece is much better than the other two.

I said the pacing for the current arc is good.But this arc is DEFINITELY MUCH BETTER THAN THE FULLBRING ARC.
This arc is still fresh and new.
But i do agreed with you that the captains throwing away their bankai was kinda dumb and i never really cared for the second in command guy since he was killed just for the sake of acting as a catalyst to make Yama angry.

Did they announce a final season was scheduled to be released in the future? Otherwise, it's as good as getting cancelled.
The current arc is stupid. What's better than bankai? Stealing somebody's bankai.

I believe it would be more like you went to the street corner and took a brown bag of stuff from the shady guy and briefly looked in the bag and thought you saw gold. Happy to receive such a high quality product, you walk home but begin to smell something awful. As you reach your front doorstep, you decide to take a good look at what you brought home and receive a snap back to reality as a you see the steaming lump of turd staring back at you from inside the bag.

I think that fighting series in general (and with supernatural in particular) will almost always end up with some OP stuff, because you have to keep impressing your viewers, and you need to keep introducing new characters that are stronger than the previous ones. At a certain point you've upped the level of strenght so much that the only thing you can produce are rediculously OP characters / skills.
That's just how it goes with these supernatural fighting manga's. Some manage to take it really slow, and keep it refreshing, like One Piece, and is probably loved for it, but in others you can very clearly see the pattern (dragon ball Z). I loved dragonball but severly disliked 'Z', exactly for this reason. The manga wouldve normally ended with freeza I believe, so maybe the author realised what would happen if he went beyond. However, I heard rumors that outsiders convinced him to keep going, and so he did.
Even if the author doesn't want to produce OP characters, often there is no other way. And if he wants to stop his manga, the fans, the money or the production company will probably try to convince him otherwise.
So yea, you are all unhappy with the piles of shit you are getting right now, but with these supernatural series it is not so easy to create something that keeps being good after so much time.

It's not easy, but it's not difficult to ensure the story doesn't become shit. Overuse of sharingan is one big blow to the series. Naruto also has very few skills for a protagonist, and Bleach suffers from the same problem. If you wanna defend them by saying they're melee-type, look at One Piece. Luffy's fighting style is incredibly versatile and keeps his fights entertaining.
Even if you produce OP characters, there needs to be some consistency in the OPness. The power levels of several characters in Naruto are all over the place. Madara and Tobi are the biggest offenders. You can come out with numerous justifications, but in the end they're just excuses.
And the genre is fantasy btw. Supernatural = ghosts

Compare One Piece to Bleach for planning and consistency: While Haki is hot-stuff right now in One Piece, it was carefully introduced, waaaaay back to the Sky Piea Arc and hints were given by several characters before it was actually introduced. While Luffy is amazingly strong for a rookie, he gets his ass kicked multiple times during the save-Ace arc. This demonstrates there is still room for growth and development.
Bleach on the other hand comes up with insurmountable amounts of ass-pull powerups and plotholes: Ban-Kai that is supposedly the most powerfull level a shinigami can achieve, only reached by several every generation. Renji, who got beaten badly by Ichigo, suddenly gets it by some random training. Ikaku who also suddenly has Ban-Kai, but is surprisingly weak and gets his ass handed many times over. Don't get me started about Aizen, who just roflcopters through every captain-class dude. And giving a 20.000 year prison sentence to an immortal being. That's a good idea.
Naruto isn't as bad and has been quite decent in the last arc. Though the growth of Naruto's power has been greatly exaggerated, Kishimoto still knows how to tell a basic story, instead of white blank sfx pages in Bleach.

Every piece (be it movies, books, etc) where there was the impression that there wasent anything bad about it, are where they quit while they were ahead. And this is true for almost anything. Just look at this thread, everyone starts to focus on the bad parts, and in the end the series is known as 'that thing that started out great but was suck near the end', while it couldve been 'that friggin awesome series'. You shouldnt force more content out of something that is already nearly depleted, or already has reached its climax. Obviously they HAVE to finish the story now, and I am happy that they are going to, but if you want the general public opinion about your series to be 'that was a frigging awesome series', then you should end your series in such a way that people crave for more. If as an author you dont really care about the public opinion too much , and just want to tell your story, then you can do whatever you want, but I bet that most authors want their piece to be loved.

Actually there are plenty of examples. One Piece is the manga version. For books, the LOTR series by JRR Tolkien and Harry Potter by JK Rowling have been going strong, much longer (and better) than its counterparts. James Bond is still popular (although not much continuation).
