Lots of stuff here, so while at work I'll at least address the easiest one.
I tried in Week 2 to do stuff off-screen, but GM rolls are GM rolls even if I sign in as a player: somewhere they get seen. I can do off-screen GM rolls with real dice for small stuff, but for attack and things the macros really help move things along (as might've been apparent when I ran out of my previously prepared ones). What I MIGHT be able to do is make a "Spectator" player, give him mad permissions (except truly important GM stuff), then GM on another screen. I'll think about it because I know that seeing everything I roll can make stuff boring for the audience. My only real qualm is that I'm running out of screen real estate and I worry about how my internet connection works when I'm on Roll20 on laptop and streaming, Roll20, and Skype on the desktop. Beyond simply the performance/connection issue possibilities for the stream viewers, I also need to be sure there's enough bandwidth for my girlfriend to do things like "homework" which, sadly for me, are actually more important than a D&D show. 
tl;dr - I've got a thought for hiding rolls better, and I'll try and work on it. No guarantee though because technical stuff.

Another Roll20 session shouldn't be too bad on your bandwidth.
I say this having played a whole session on shitty cellphone-tethered internet with pretty much zero issues.

Don't show the 'chat' in Roll20. Simple as that. Just hide all rolls and if people on stream really want to know numbers then we can just say what number we rolled.

I've been having roll20 open on both my PC and tablet so that I can keep my in client character sheet up on tablet for rolls and shit without having to keep closing and reopening it to look at the table.
It's more effective for my other games where we're using Google Hangout integrated roll20, which leaves us a bit less real estate, but it's working out pretty well for me.

Wave, only reason I don't take that path is because I think that (as a watcher of RollPlay) seeing the player numbers pop up can be really fun.
Frankly my whole reliance on Roll20 maps is a bit of a mixed bag for me too. I want to be able to orient the players in an explicable way, but so far I don't have the time or artistic capability for verisimilitude between my imagination of Iris and what's on screen. It's a slight conundrum. Also, 60 ft. away from an enemy is a LOT of space on Roll20 unless you're WAY zoomed out, at which point the visuals become crappy for the audience, which sucks.

Even without an audience, zooming in/out constantly was a big problem for me in roll20, just because of how the necessary scales changes when you're fighting things and when you aren't.

NO I'M HATING IT
I'm looking forward to our first dungeon crawl. I'm also realizing that taking all spells useful for entrancing and keeping the attention of people might not be very useful for dungeon crawling.

EDIT: Though this is also why I tried to sell Wave so hard on Silent Image--because while it's not spectacularly good in any one particular circumstance, there's virtually no situation where it's not at least useful--combat, social situations, exploring, sneaking around, making special effects for Roger's stories, etc. there's always a way to use Silent Image.
Also, apparently this isn't really Iris-related, more than just 5E in general, but apparently Sword Coast Legends will be using the 5E ruleset?

Oh, sure. I'm more thinking my Sleep/Charm Person spells - not so useful against rock guardians. I still have to look and see what new spells I want. =D

I didn't know what it was till like a day ago when I saw an article saying it was using 5E. Apparently it's a new D&D PC RPG.
