Unpasteurized british cheddar is actually really good (that's three farms in the entire UK).

I think you're talking about processed cheese, not actual cheddar cheese? The "cheddar" that comes in thinly sliced plastic packets actually can no longer legally be called cheese in the United States since about 5 years ago.

Most brands that sell this type of "cheese" now use some kind of witty brand name like Kraft's "Singles" and have something like "processed dairy product" written in a smaller font in the corner. But there is also cheddar cheese that is actual cheese too.
