On Sunday night the girlfriend and I went out to a galbi (갈비) reastaurant. Galbi is beef, basically. They were cool and didn't mind me filming in the reastaurant so I broke out the camcorder. I got it all imported and started editing process this morning and I ran into a problem.

It's long. I've got well over an hour of footage that I shot over the course of the meal and while a lot of that can be trimmed off, I'm still looking at a video that will probably be over 30-40 minutes. The reason being is the way I've structured them, it's not just 'here's what the food looks like'. I'm also throwing in Korean culture tidbits and explanations for certain things.

So, I thought I'd put it to you all since you're my target audience. Do you mind watching the longer videos or, for something lime this do you want just the basics? For instance, I spend a few minutes in this video going over how to use chopsticks and explaining why they're important in Korean dining situations.

And if you like the more detailed videos, do you prefer them to be in smaller chunks, like multi-parters or do you want it all in one piece.

Any feedback helps me make better videos for all you Koreaphiles out there. And if you want to check out the first video, look up my last blog post.

Most people have pretty short attention spans and will stop watching if its too long. I'm not sure what there really is about eating Galbi that could take 30-40 mins to explain. That to me sounds excessively long. I'm not the most cultured guy so I'm sure I'm missing out on all the symbolism and meaning and everything but its basically just a barbecue inside that you eat with chopsticks. Its awesome and really tasty but I'm not sure how much entertainment value there is in watching someone eat Galbi.

It is a major problem with home camcording that you end up with a lot of footage that’s kindave interesting but not really. I have loads of video from a holiday to Peru I went on, its kindave cool and all but there's 3 hours of it and very little actually happens so its actually pretty boring to watch. I guess I should learn to edit.

What is the purpose of the video is it like an amateur cooking show type thing or just filming an unique experience that you had?

edit: sounds really negative. Need to insert some kindave props on going out and trying something new and I'm sure you enjoyed it because its delicious.

Why waste footage? You might as well throw it in. Just make sure you dont keep the awkward silences and waiting for food parts in the video.

Yeah, some good points. It's not a cooking show, just an introduction to Korean food with cultural points, rules of etiquette and so on. I talked about the chopsticks, koreas's drinking culture and how to poor drinks, etc. I am going to do some cooking in the future but the episodes will be a mix.

I'll chop it down, though.

They have both, as well as plastic ones. I think it has more to do with durability than anything else. Metal will fare better after repeated washing, especially in restaurants. Wooden ones are usually cheap and disposable.

I honestly can't find a reason for this video to last for more than 5 minutes.

You should eat the live octopus/squid thing next. The one where you eat it whole.

metal ones are more effective and easier to use too!

If you magnitized the food they would become even more effective.

One thing I can tell you is that it's considered bad luck to have to chopsticks that don't match. Or so I'm told.

Anyway, back to editing. I think this is going to have to go through a few different drafts. I don't want to cut down on all the cultural points because that's kind of the point of the show, but I'll do my best to keep it manageable.

Korean chopsticks are metal because of their history/traditional. Back in the day, the chopsticks were pure silver for the king. If silver were to touch poison (ie, someone poisoned the food), it would turn black. This way, they can tell if someone tried to poison the king. Keep in mind, not all poison turned the silver black but you get the point. Anyways, commoners tried to emulate this so they started to use metal ones.

Chopsticks are still metal today but no longer made out of silver just cuz they are used to it or tradition.

this is one of the explanations...not sure if its true but it sounds logical and cool

Woha that long about galbi? Lol ^^ I have them all the time but you know, unless you have an encyclopedia inside your head I dont think you would be able to explain about galbi for more than 10 minutes

Oh shit, for anyone trying this please remember the correct way to eat a live octopus is to do it upside down with its face pointing downward (you grab all the legs with your hand). I remember watching it on TV

I'll be honest its still a little bit long for my liking I started getting a bit bored after 10 mins or so. On the plus side you're looking pretty confident behind the camera and gave a way more competent explanation than I would manage.

Yeah, they won't all be that long. I envision the bulk of them around the 8 to 10 minute mark. I'm aiming for interesting and informational. I had to cut a lot of cultural explanations out to make it more manageable, which I didn't really want to do but the public was more or less unanimous that shorter was the way to go. I cut out the part about why chopsticks were useful, how to use them and, more info on how Koreans will interact at such places and the proper way to poor drinks and why.
