honestly I don't really know shit about the PSP. My g/f and I each have a PSP to take with us to europe to kill time in 30hr flights, what games should I get?
First and formost, I plan to get, God Of War FF: Crisis Core for myself..
Most importantly, are there any games we could get to play together? co-op, etc
Also, if there other really sick single player games you want to recommend, i am willing to do the research on my own. note that I have already played and beat MGS: PO

If you have a memory stick (1GB+) then you can download PS1, GBA, N64, and other PSP games. There are already people working on DS games, but it's really buggy now.
A game I recommend: both GTA's, though you probably already played/beat them.
You can do a lot of shit with PSP. Don't forget about movies. I downloaded this thing for mine that lets me stream videos from Youtube, Veoh, Dailymotion, etc.

I think you can pretty much always downgrade, just need to wait for the developers to release a new version. I'm a bit outdated though, since I haven't had to update my custom firmware for a while.. but from what I read, it can be done now. I actually have no idea what the newest official firmware is, does anyone know? Looks like developers are in the testing phase for 3.95 custom firmware.

Lumines is a really good block puzzle piece falling down game, both in the game mechanics and nice synthesis of actions/sound/music.
Valkyrie Profile: Lenneth is a quasi-action turn-based RPG with 2D platforming (+puzzle element) dungeons. It's reviewed as well as FF:Crisis Core, even though FF:Crisis Core has the words "Final Fantasy" in the title, and that VP:L is a port of an older PSOne game. But it's a kind of polarizing game--some really like it, some don't. Read up on it if you're considering.
FFT remake is on PSP if you're into that. The game is overrated but still worthwhile and a good timesink.
edit: if you're into 2D style platforming games, there's Castlevania: The Dracula X Chronicles (remake of game that came before Symphony of the Night) and Mega Man Maverick Hunter X (remake of Mega Man X on SNES). Afaik they're nothing really outstanding, but they should be solid enough.
Coop...I have no idea. Lumines Live has coop I know for sure, but I don't know if the original has it.
