You each bring a set amount of decks (3 for a bo5) and after you win a game the winner can't use that deck again. So you need to win with all 3 decks to win the match.
The other format is hero elimination, which is the opposite. The winner keeps his deck while the loser has to switch. So in conquest all your decks has to be strong while in hero elimination you can have one deck to beat all your opponents decks.
Conquest is used almost all the time nowadays. It's quite a difference in strategy between the two. Bringing a good lineup is often more important than playing really well, and is imo what requires a lot of skill.
