They know the maps and pick players for each map. They don't know who their opponent is until the lineup is announced

KeSPA gives the map order, the teams select their lineups and hand them to KeSPA. KeSPA releases the lineups simultaneously, usually a week before they play, so the players can prepare builds to counter their opponents.

But almost all PvPs are determined by a single, winner-takes-all, collosus-based engagement. It needs to be fixed.
