I honestly think Polt would prefer to win two Bo5's.
It means Stephano has to beat him three times in five sets.

Not quite, normally the finals would also be BO3 so no matter what, you're not out until you lose 2 BO3s. He' saying the difference is Stephano has to lose to BO5s (6 games), Polt/Sleep is out if he loses 1 BO5, 1 BO3 (5 games, which is less than 6).
However, BO5 finals are more exciting than potentially only one BO3, so it has merit.

No, most tournaments are exactly BO3 up until Semi's, or at the very least finals. then swtich to bo5/bo7.

Well I can't really find an example other than MLG in a similar spot, since I don't know double elimination which aren't just a Bo1 with a possible 2nd Bo1, but if we compare to MLG, they just always have Bo3(which although sucks, still makes it so the winner doesn't come with an advantage other than just still havent lost a series). My point is merely that Bo3 != Bo5, so basically now Stephano has to loose more than Polt has to, to end up 2nd(this all assuming Polt wins obv).
