Watch season 2.
You can skip the episodes that coincide with season 1. Skip endless 8 except for the first and last episodes unless you're a masochist. Then you can watch Disappearance.
Edit: Oh, and you can go ahead and watch the Angel Beats OVA. It's not bad, it's just... fucking insane, I guess.

Watch the first, second and last episode of Endless Eight if you want to skip it. It's a little more painful that way, but the conversation (and the scenes with Yuki) are important to the overall story and Disappearance in particular.

And Endless 8 isn't too important for Disappearance, you can do completely without imo. Or just watch first and last episode so you don't strangle someone.

There really is a lot of elitism in this thread. Pretty amusing.
Personally I liked Elfen Lied. I think it was the soundtrack that won me over.
The best animes I've seen and yes they're AMAZING would be:
Monster (So epic, completely captured me. Masterpiece.) Hunter X Hunter (Good ole' shounen business. I just loved how the story progressed in the manga) Hikaru no go (What can I say? I love shounen. They're addictive ;D)
Edit: Throw some recommendations at me based on my faves. ;D

As stated previously, if you really want to follow Suzumiya Haruhi's plot only, then Bamboo Leaf Rhapsody is the most important episode to watch and arguably the only episode you need to see (Endless Eight only helps set up Yuki's character for The Disappearance of Suzumiya Haruhi but that's about it).
Also, Angel Beats! OVA was really disappointing, at least in terms of development; I kind of expected it to go somewhere but in typical Angel Beats! fashion, it falls flat on its face with stupid shenanigans.
It was however (and somewhat sadly) more hilarious than just about every episode that was broadcasted on TV.

Why did people expect anything from the unaired AB episode when it stated at the beginning that it is just a gag episode?
That and we are getting an AB game, like hell if I am counting on anime for plot.

Besides, Haqua, Kusunoki, and Chihiro combined take up roughly 16 chapters, which is how much season 1 covered.

Maybe some people like me didn't read the part where it said "gag episode"....or didn't see it....

At least it was fun to see all the AB Characters again.

The timeline, general premise and the presence of a tension meter pretty much told us that we are just supposed to laugh if we found the episode funny lol~
and yay Haqua in season 2 would be awesome.
