You can do that when you have no other choice. You have a guy with a great and unique magic working for you and completely fine with transferring it to your enemy and continue working for you. He even suggested it. Why would you not take that option? This is literally just villains being dumb for the sake of plot. What if Face backfires or stop working or whatever? The only thing you accomplished is to remove one of your own. They didn't even bother to be like "okay transfer it" and then lock him away afterwords in case he's needed. And I remind you, this is a man who betrayed the rest of humanity for his own profit, and is content with working for you even though one of the strongest guilds will be coming after them. Is this really a man you think you can't trust?

This is a guy who's betrayed the rest of humanity even after someone came and attacked, coming from one of the strongest guilds. He's still like "whatever, still helping you guys and being really chummy with you guys". And, to try and bring this point home, tell me this: why did they kill him? What exactly made that seem like the best option, when he said they could transfer it over and just kill that person. I'm telling you, they killed him because they're terrible villains, who don't like to plan in case stuff happens. Now I'm starting to wonder why I originally made this argument. Complaining Shounen villains are shounen villains.

I agree. It was pretty clear that they were just gonna kill him after they got Jellal anyway, this just saves them some time. It's a wasted resource true but this is Fairy Tail, all the villains are stupid. All of them.
Am i the only one who has a tough time remembering all the characters? Sometimes i think "ok this guy is drawn like he is important and i should recognize him but i have no idea who that is.". Also i cant remember any bad guy since the grand magic tournament arc. Is it just me not paying enough attention or does someone thinks also that all the non FT characters are completely forgettable.

It's just arrogance. Remember that they also have... 3 hostages and technically the bomb just annihilated Fairy Tail. It's not that bad, really.

by "deefeated 2 of our members" you mean A) the dude who died on purpose to attack and B) the dude standing right next to him?
also they arent there to fight FT just there to watch the fireworks
and they didnt know they couldnt activate it remotely beforehand
