Unless they're advocating for genocide of real people and slipping down that slope, I wouldn't worry too much. Fantasy and sci-fi is chock full of dumb high stakes like genocide of races and detonating planets, and sometimes the best you can do is just laugh it off from the absurdity. I get your anxiety though, because of all the Deus Vult LARPers on medieval games fighting their civilizational conflict against Muslims or whatever "unwashed masses" they are substituting for brown people. Then they wonder why their friend can't take a bit of a politically incorrect joke and fall down the hole of "free speech advocates" and "Guy DESTROYS Liberal Snowflakes Who Don't Appreciate Humour".

Second of all, stellaris has been, since release, an extremely lacking experience. Do not buy it. The only thing separating it from a skinner box, as is the case with most video games, is a ludicrously thick layer of decorations and some """roleplay""". The games mechanics involve almost exclusively clicking buttons in reaction to events you have NO influence over, especially in single player, but that is also the case in multiplayer. in the 200 or smth hours of gameplay I clocked in it, it was all chasing fun, no actual fun. You gradually build up a series of somewhat related numbers until one of the end conditions is met, which are: you give up, realising how futile the entire thing is, you paint the galaxy your colour and walk away feeling the entertainment equivalent of misjudging a staircase, or one day forget to continue your save, and when you remember 2 expansions later it feels better to simply restart. With the combat being 50% macro and 50% cops and robbers, and the economy game being complicated only by the means of being spread out across a lot of mildly usable UI elements, the game is won and lost entirely by your spawn location.

You're second point is actually pretty similar to my experience with EU4, if you survive the earlygame it just becomes tedious map painting either by conquest or colonization, maybe with a sprinke of "will the ottoblob attack me if I do this thing?" or "can I get the alliance with X before Y attack me and kill me in one war?". I've been afraid that Stellaris is similar in nature, but I'm a sucker for space and spaceships, so from time to time I entertain the thought of buying it.
As for thicker skin, I'll try but no promises

In stellaris, they are completely manufactured. I mean ffs the lategame event is ALWAYS something just showing up out of nowhere. seriously, play something with less filler
