I'm bored as hell right now so I'm looking for anime suggestions.
Anime I've liked:
Bleach (only up to the soul society arc) Naruto (until episode 135 or so) Cowboy Bebop Samurai Champloo Hunter x Hunter (this is awesome) Full Metal Alchemist Full Metal Panic + fumoffu Akagi Love Hina Rurouni Kenshin Hikaru no Go
In general, I like light hearted anime with some comedic aspects and a likable hero. I'm open to those that are thought-provoking though, but I tend to steer away from overly taboo ones like Bible Black, and vampire related ones are kinda meh.

Gintama or Law of Ueki is probably best based on the ones you already have down. Actually, Law of Ueki should be almost perfect for what you're looking for.
Denno Coil or Shion no Ou, maybe? These are just anime I recommend for anyone, really. Shion no Ou isn't exactly "light-hearted", I guess.

Not light or comedy, but best anime ever.
Elfen Lied
Again it's neither, but second best.

Neither again. Sorry. These are just the 3 best animes I've seen.

Outlaw Star seems like it would fit into your tastes very well, not very thought provoking but its definitely a fun ride. Think of it as a less serious Cowboy Bebop with a higher emphasis on space battles.

I barely know much about anime but definitely watch Death Note. The story is great and the plot is awesome. You'll be on the edge of your seat waiting to see what will happen next.

Neon Genesis Evangelion
Although this anime does tend to require the viewer to actually have some intelligence in order to appreciate it (unlike 99.9% of other animes).

I really don't know a lot about anime but my suggestion would be Death Note and Samurai Champloo.

One thing that I forgot to mention is that I like the series to have a well-fleshed out world with some depth to it. So anime that looks too "generic" to me is a a big minus.

Is queen's blade actually a good anime, or is it just large-breasted girls in skimpy costumes having cat fights?

Anyway, i would recommend:
Code Geass: You either love it or hate it, because its a really fun show that had massive potential to be one of the best anime in recent years, but failed really hard in the end. You can see it as a glass half empty or half full.
Claymore: Dark fantasy world, lots of violence and gore, great animation and some really memorable characters, but an awful end.
Higurashi No Naku Koro Ni: Massive mindfuck, you can watch the whole first season and still not have any real idea of what the hell is going on in that show. If you like mistery, drama and a little gore, this is the right show for you.
Casshern SINS: Beautiful animation with a retro art style, great action scenes and some depth in themes of the show, but the story is a little bland.

Last Exile and FLCL are by far my favorites, but then I haven't seen much anime.
Last Exile is like steam punk slash castle in the sky (if you haven't seen miyazaki's work... go watch it before anythign else!) The art direction is second to almost none, but the writing is lackluster. Still worth watching.
FLCL is hard to describe. It's by the same company that made Evangelion, so the quality overall is fantastic. It's bizarre like evangelion, but not in a way that takes itself too seriously. You'll have no idea what's going on, but there are some really great moments here. It's only 6 episodes, so there's no reason not to watch.
just a sidenote: if you're going to recommend something, at least describe the anime a little. it doesn't do any good just hearing the title, since everyone has different tastes.
can anybody recommend anime with good writing?

Ghost in the Shell The original movie, then Stand Alone Complex (Both Seasons), then Solid State Society. I didn't find innocence to be that good, since 70% of the dialog was quotes, but it comes after the original movie if you're interested in watching that.
If you like movies, Paprika and Akira.

tengen toppa gurren lagan. i've watched a lot of anime and this is my all time favorite. it had a lot of sick sick moments that just made me feel happy or sad or )). there are other good ones, but nothing stands out as much as this one.
since the ones you listed are more action/adventure animes, you could check out One Piece. i think people that like naruto/hunterxhunter would like that. Code Geass and fate/stay night are also good choices.

The anime that REALLY fits your criteria (and is just plain awesome no matter what) is haruhi. Definitely watch that. Execution of pretty much everything is flawless. I'm lolling throughout so many parts of it, and the overarching storyline is cool. Epic ending. Just remember to watch it in broadcast order, not chronological order.
About eva - you need intelligence to watch this because the story, the characters' motives, overall concepts, etc wont make sense if you dont take the time really immerse yourself, watch it a second time, and just think about eva. The thinking part is what you need intelligence for. Not saying you can't enjoy it if you don't do all those things; I just found doing those things enjoyable in themselves.

Not sure how the argument works for people who hasn't read the [translations of the] light novels though.
If you want to, try watching this season's Haruhi, it looks like the season1 portions are being done in broadcast order.

Seeing as you listed Fullmetal Alchemist you should probably watch the movie if you haven't already done so. While not overly fantastic, it does tie up the plot. Also Fullmetal Alchemist: Brotherhood, a remake that will be following the manga more closely, just started airing last week. You should probably start following it.
Besides FMA, I'll just echo what everyone else has already said and second/third/fourth Haruhi, Death Note and Code Geass.

EDIT: shit I just saw no vampire related ones but if you haven't watched hellsing yet it still is worth the watch even though it is a vampire story.
