There are airport buses that can take you to Seoul's old city centre (Jongno) in about 1h~1h30 for about 10k won (~10 dollars), which is probably the fastest and most comfortable way. I don't remember which lines though :/

There you can do almost anything, eat great foods, visit temples, buy memorabilia, etc.
Most notably:

I recommend getting your breakfast and lunch here; almost all restaurants (even the ones hidden in side-alleys) are great. If you want, I can point out some hidden restaurants including an awesome dumpling restaurant.

I think this could be a good schedule:
- go to Jongno
- go to Insadong street
- eat breakfast at Insadong
- look around a bit until 10h40am
- go to main palace
- take the English tour at the main palace (around 30mins-1h), look around a bit more
- eat lunch at Insadong
- go back

NOTE: a lot of attractions are closed on monday/tuesday. (one of the two)
