There are so many characters I want to try out, but no real avenue to do so. At least as a DM I can create some of the more prominent NPCs into some good characters.

Fuck I'm having a real issue right now. Long story short, I might be able to do some extra time where I am now rather than do it an hour away in a different city for 2 weeks.
If I do it here it's way less stressful and the hours are normal, but if I do it in the other city I get much better experience but I could theoretically be working upwards of 12h a day for 2 weeks and the mental and physical stress is extremely unpleasant, or so I have heard.
I think I'm leaning towards suffering for those 2weeks but it's going to be absolutely horrible.

The way I've started to look at things, if you can survive through it then do it when it benefits you in the future. After those two weeks you'll probably forget about how bad it was (for instance, can you actually remember how tired or stressed you were, say last week monday), and then you'll only have the benefits to look forward to.

12 hour days aren't too bad and if it's only for two weeks I say tough it out. Embrace the new experience. Worst case is you hate it but you stop after two weeks anyways.
Edit: just gotta breath and relax. Sit back a minute and think. Do what ever works for you wave.

That's cool. My character would probably be better off as a NPC anyway. I'm mostly at the gameplay end of him right now. + Show Spoiler +Nobleman who wields a longsword. Has Protection but no shield, instead opens for Opportunity Strike if doing the protection reaction. Battlemaster fighter style (retired elite guard?), can then Parry incoming hits, do the Goading strike etc to protect his entourage (might be an old archer friend, they'll be a target because they guard a secret (entrance to cool place? heir?). Always yield initiative (tired of killing, tries to dissuade comers).
