I don't know his salary or the money he wins via stream (maybe you have an idea about it?) but 5000 is about 6% of his total earnings in tournaments. It's still quite a lot, and his "in the bank" philosophy to save for his studies makes it weird. I think he still considers what 5k is worth.

Stephano plays ZvP really differently to Nestea and Leenock. I don't think you can translate it like that.
That said Naniwa (like MC) is a Protoss who doesn't believe in 3rd bases in PvZ so like MC I think he might do okay vs Stephano, although Naniwa always does a Collosus 2 base push and MC always does pure gateways with ups/blink.
EU Protoss play into Stephano's hands too much by always looking to play a drawn out macro game vs him.

My guess is that he feels like he's favored vs Naniwa and because he's already got a lot in the bank that it's a pretty safe bet for the potential winnings.

I think he never thought about earning this amount of money in this short amount of time. He must have enough to easily bring him through his studies with partying every weekend. And that Nani vs. Stephano 10k showmatch would be the biggest thing ever. Should be held at a Dreamhack or something.
