That's not what the earth looks like. It's a heavily exaggerated representation of the Geoid. The Geoid doesn't even attempt to model the shape of the actual surface of the earth, so this is misleading in two ways.

Note that the bar on the right is in meters, and obviously that small a variation in meters would not produce such a lumpy shape on something as large as the earth.
