Im not alone, i also found Cowboy lacking, something. Maybe in some time ill watch it finally. After so many years i still could not bear to watch it, dunno why. But credit where is due, opening is awesome (and music). First and foremost start with GITS, original movie from 1995, there is remastered version but i heard it sux to put it lightly, then you can go on to watch GITS series 1 and later 2 if you like it, but the second for me its not really must see, but first series is awesome. There is also GITS Innocence the second movie, but its only when you are really into the series (philosophy overload, sometimes forced). Conclusion watch GITS 1995, its classic, there are HD versions of it, this anime doesn't age, pure masterpiece. By GITS i of course mean Ghost in the shell  For the story watch Death Note (but i bet you probably already watched it), its good for starts, and even after all these years its still super awesome. Nail baiting till very end. If you want to invest some time watch Monster, the manga version was good enough to award its author Pulitzer, anime is also very good.
thanks i was gonna watch GITS next, the posters look interesting. And yep I did watch Deathnote, wasnt a fan of the ending though, I thought they dragged it on for a bit, *spoiler* I didnt like N's character as much and Light let his gaurd down after L's death .... i mean i didnt enjoy Light and N's interaction, wasnt as absorbing as Light and L's witty battles.

For Bebop, the "main" plotline is mostly touched at the last few episodes with some slight exceptions. Also, Fey has her own story that you have no idea about if you've only watched 7 episodes. But yes, the bulk of the series is probably meant to show character development and random side-stories. As someone above said me, it's episodic.

+ Show Spoiler [Symphogear - 13 (END)] +This episode was so stupid. Fine yanks the piece of the moon that broke off which had me laughing for a while. Hibiki, Tsukasa, and Chris pull out their upgraded weapons to take out the moon piece before it hits the earth. AFAIK they did their swan songs to take out the piece of the moon only to magically appear weeks later, out of nowhere to save Miku and a random lady. Tsubasa should've been dead three times. I'm still thinking of the gaping hole left in the moon. I knew I should've stuck with my prediction of the happy ending despite the cold open on episode 1.
It was a pretty stupid ending to an already bad series. Chris and the Commander aren't enough to save this series unfortunately. It's definitely the worst series I've watched that ended this season for sure.

+ Show Spoiler [Symphogear - 13] +All I can say is that I enjoyed this show the way I enjoy really bad jokes, their so bad it's almost good. Never the less it's not something I would ever recommend to anyone. I was really confused how Hibiki managed to sing her swan song initially and do nothing with it the aura ever went away all the sudden. Also the attacks they did on the moon went beyond oh man super epic massive attack and intot he stupid range.
