I'm going to make Banana bread, and I want to follow this recipe: http://allrecipes.com/Recipe/Banana-Banana-Bread/Detail.aspx. I however do not have Brown sugar. Anybody with baking experience have any ideas on improvising?

For each 1 cup firmly packed light brown sugar called for in a recipe, use 1 1/2 tablespoons molasses plus 1 cup granulated sugar (add twice the amount of molasses for dark brown iirc).

if you don't have molasses, then just use regular white sugar. It'll affect the taste a bit, but not by too much (at least IME).

As far as i know, white and brown taste the same, except white is more often used for cakes and stuff so as not to stain them. Brown can be used for anything else.

No, they do not taste the same.

i've used white sugar a few times as a substitute and it works just fine. your banana bread will taste a bit more like pound cake, but unless you really really care it doesn't make that big a difference.
