So I've been in Beijing for about two weeks now, and I've been looking very hard for good food, but so far it has been very disappointing.
I used Dianping (Chinese yelp) heavily during my research, and tried mostly restaurants with more than 1000 reviews and over 4 stars, but none of them really blew me out of the water. At this point, I honestly prefer the hotel's food over local eateries, which is truly a shame.
To give some perspective, I've had these (and many more that were even less memorable):
Da Dong Duck
Hai Di Lao Hotpot
Yao's Liver
Hou's Wanton
Some supposedly famous donkey (probably my favourite thus far)
Capital M (supposedly upscale modern European restaurant)
Ding Tai Feng (Michelin 1-star in Hong Kong)
I don't have too many meals left in Beijing, and I would love to hear some recommendations from locals or past visitors.
Ideally, I'd like to try Chinese cuisine, but at this point, I'm really open to all suggestions. I live in Chaoyang near Guo Mao, but I am willing to travel. Price is not a huge concern, but hopefully not exorbitant considering how cheap food is here. Feel free to type Chinese here.

Do NOT go to that very famous restaurant in 北海公园, it's expensive, and just bad. I know you wanted recommendations, but that one is very often recommended.
Ding Tai Feng is really disappointing. I mean it's not bad, but when you're used to Michelin standards, it really sucks....
Hai Di Lao is a chain, and for a hot pot chain, 豆捞坊 is far superior imo (just went there last night in Shanghai)
Capital M is the Beijing branch of "M on the Bund" from Shanghai. Once again if you're used to eat in Michelin starred restaurant, it's very disappointing.
I don't know how long you're staying in China, but you should go to a nice Sichuan restaurant before you go home. I recommend 川办餐厅, the address is 建国门内贡院头条5号

Which regional cuisine does Jiu Tou Niao belong? I've had Quan Ju De multiple times in the past, and I honestly think Da Dong is better.

Yea, I was really disappointed with Ding Tai Feng and Hai Di Lao, I heard so many good things about them too. Capital M was also very disappointing, but at least the view was good.... Not worth it, given its price.

南来顺饭庄

介绍：于1937年开业，是以爆、烤、涮及风味小吃闻名于北京。
白魁老号饭庄（隆福广场总店）
地址：东城区隆福广场前街1号
介绍：京城老字号饭馆。白水羊头、烤牛肉、烤羊肉是特色。
天福号
地址：西城区西直门内大街213号（马相西巷6号）
介绍：北京老字号。酱肉是特色。
都一处烧卖馆（方庄店）
地址：丰台区方庄蒲芳路1号芳城园美食街15号楼
介绍：北京有名的百年老店之一，有乾隆皇帝的亲笔题名。三鲜烧卖、葱烧海参是特色。
Haha, baidued.. but yeah nothing truly restaurant quality. As a northerner, the snacks and breakfast are unique and worth a try but don't expect a restaurant culture. The so called 100 years shops ( 百年老店）are all living on name only.

I went to this place once with some friends, it's certainly worth it if you're looking for something different. Basically you just get a table, put money on a card and then take a tray down the aisles of small stalls, buying whatever you want. There are usually traditional performances of some sort in the dining area too, if you're into that kind of thing. The food isn't anything that you can't find elsewhere, but I'd recommend trying it once just for the experience.
This isn't a restaurant, but if you're looking for a cool bar then I recommend Lan Bar (兰会所). The drinks are pricey, but the decor is pretty amazing and they often have live entertainment.
As someone who spent most of my time in Bejing eating at 成都小吃 unfortunately that's about all I can give you =/
Also, for what it's worth...海底捞 is actually not that bad imo.

Hai Di Lao was really good when I went there
Ji Qiang Niao is really good for Hu Nan cuisine, I love that place. Hu Nan cuisine is really spicy so just a heads up.
If you want to eat Szechuan cuisine, try Fei Teng Yu Xiang, the Szechuan fish dishes there are amazing.
That's all I could give you for now as I haven't went back home in a while. Also don't listen to a lot of reviews you see on Chinese websites, they are terribly unreliable. It's better to ask around especially to the people who has stayed in Beijing a long time. As for me, this blog is making me home sick.
You could also go to Wong Fu Jing and in there find the snack street, the snacks there are awesome.
