Of course, some people have a hard time holding on to money and be disciplined about how they spend it over time. If you know you will only waste it on sushi if you save it, decide which big expenses you have been looking at are legit needs or serious wants (not just a whim), and spend it now.

As for the money left over, why not save it? Just because you have money doesn't mean you have to spend it, saving it for a rainy day is always a good thing, trust me on that

 1) You could be that much closer to a down payment on a mortgage (renting is throwing money away) 2) You might not get a job for a while after graduation, you could use this money to avoid moving back in with your mom 3) Invest it- why spend a $1 today that could have been $1.25 tomorrow? or buy this

That being said. SAVE IT. (Unless you have credit card debt, pay that asap). Do you have student loans? You'll need the money in the future. Even if you don't have loans, an extra two grand cash you ahve towards a car or house purchase is significant.

Open up a Roth IRA account with a brokerage and then invest it into bonds at the very least, which are small next-to-guaranteed percentage income thats higher than any bank will ever give, maybe 3% or so. Or you can find ETF's which grow at a steady rate, much higher than bonds, and you can just invest it into the stock and leave it there, or go ballsier and invest it into a growing company which can net you 30-100% gain in a year. An account like an IRA account, you can't just withdraw the money whenever though, its like a retirement fund of sorts, but there are ways you can take the money out, ie: to pay off student loan debt, among a few other reasons (you can google "How to withdraw from Roth account without penalty") but you can really make a lot of money doing this, isntead of having it sit in a bank with no interest gain whatsoever.

 2. Save it for a down payment towards your new home (20% recommended). 3. If you own a house, buy these stocks as of today 5/17/2011: VNDA, MAS, and/or KBH watch money grow.

I agree with Zlasher, I should of suggested ETF's to begin with. ETF's are funds that don't really need much managing on your end. All you have to do is put money in and collect points. However, if you do want to dabble into the stock market by picking your own stocks, you could begin with some of the stocks I suggested, stocks will require more management than ETFs. If you decide to go the ETF route, I would suggest: IXJ, VDC, IJH If you go stocks, remember it's about picking stocks you feel are fairly valued. Pick discounted stocks such as Apple AAPL which is currently selling 338 but worth 450 and not overpriced stocks such as Netflix NFLX which is selling at 239 but worth 100. As of today 5/18/2011: I still like VNDA, MAS, and/or KBH.
