Stephano stopped StC's early pressure in the first few games and obviously StC felt that it would not work on Stephano like it did on Idra, so he didn't do it.
Why are you even bringing up PvZ? He played a pretty good ZvP vs. Inori. It was very well thought through, diverse, and economic. Just because he doesn't play like YOU want him to play, doesn't mean its cheesy or bad. Maybe you should stop comparing him with IdrA and start looking at his results.

that's how logic works for a lot of people.
A lot of these guys made it very far in the tournament because they're rather low profile players. MMA, MC, etc. all have a lot of games to study and I'm sure everyone is familiar with how the play and their build tendencies. If stephano or lucky win here it's going to get harder to win at the next tournament when you have a target on your back. This is also kind of why it's so hard to win back to back tournaments, especially GSL.
