Lol I loved, maybe my anime taste is bad. I don't really watch a lot just here and there when I find something interesting. Should I rewatch Fate/Stay Night maybe with the new version as well? What about later series like Zero and Unlimited Bladeworks which version should I go?

Deen just did a really poor job adapting the Fate route from the FSN VN. Fate/Zero was done by a different studio and it was done better (more faithful to the Fate/Zero prequel LNs).
the UBW anime was done by the same studio that did Fate/Zero (they are also doing a series of films for the Heaven's Feel route).
To break it down, there were 3 routes in the FSN VN: Fate, UBW, and Heaven's Feel. Then there was a prequel LN series written (Fate/Zero).
Deen did Fate route. ufotable did UBW route and the Fate/Zero prequel. They are also doing the Heaven's Feel route).

Most of the complaints towards DEEN come from people who have read the VN first (like myself). I'm sure it's not terrible if you have no knowledge of the story and how badly they adapted it

I never played the VNs myself so really not the right person to ask. I just skipped the DEEN version because everyone told me to skip that  I don't even know what the original covers and Slaughter just mentioning what's what only confused me more. I only watched Unlimited Bladeworks and Zero~

Ah no I didn't read that VN and Manga stuff is a bit above my level of dedication. What do you think? Is it worth to rewatch Fate Stay/Night with the new version or am I good to dive into Zero and then Unlimited Bladeworks cause those only have the 1 version?

if I'm not really mistaken the new version IS Unlimited Bladeworks. They haven't redone the original DEEN one at all. So usually you'd watch Fate/Zero next and Unlimited Bladeworks after what you've watched now I think?

Well there is no new version of the material Deen did. They did the Fate route so Zero and UBW (by ufotable) are the only ones left. No one has redid the Fate route (which you watched).
To be clear Fate/Stay night was a visual novel with 3 routes which tell the same story but happening in different ways. Fate/Zero is the prequel.
I only said what I said because I read the VN so I know the story and was not a fan of how Deen adapted it.

I just watched the first ep of Rewrite... it was decent. + Show Spoiler +So many girls though.... felt like every 4-5 minutes another different one appeared. Pretty long intro episode, and for an intro it was OK. Still not quite sure wtf is going to happen, but that's a good thing after just seeing the intro ep I guess.

Tales of Zestiria the X prologue episode was action/visual porn (unless you despise even nice looking CGI). Typical UFOTABLE anime. First episode was nice entertainment, however depending on how the story is, it could still be shit (good shit though, since it's so pretty) or great.

I read on MAL the game for that anime sucks badly storywise, so probably a good idea to not play it. Also some say the anime story will be different. Though idk if that's true.
Anyway, the story can be bad and I'll still watch it. So beautiful.
