Regardless what you do, I don't think it's that important (museums seem like a good choice imo, but you need something good).
It's the dinner afterwards that seals the deal.
If you really like this chick, take her out to a fancy dinner and crack open a bottle of wine (they'll probably sell it to you if you look old and dress up).
This is what I would do:
Museum - Museum of natural history, or the MET (and impress her with my ability to get free passes) or Broadway show (if you guys have some sort of theatre, it works too) Then a fancy ass restaurant.

However, I don't think any 'normal' girl would appreciate being subjected to SC on a date. I agree with the active date ideas - it avoids awkward silences, gives you something to focus on other than nerves or small-talk and opens up so many more choices depending on the type of girl you're going with.
