I feel like eating kimchi with rice, but I've only eaten kimchi like once in my life. I'm going to go to this big korean supermarket that is nearby my house, and will be buying a jar of kimchi to eat with some rice. I know that there are different kinds of kimchi, but I am not sure which one is the best. Can you please recommend me what is the best tasting kimchi to buy?

Previously, I felt like eating ramen and everyone recommended to get "Shin Ramen" because it was the best. I ended up buying shin ramen, and indeed it was the best. What kind of kimchi is generally acknowledge to be the "best" kimchi?

Tobagi, best brand, nationally available. I would get beef cooked in some form, if not BBQ. Kimchi and rice alone is good but can be improved upon. If you just have the rice the kimchi will overpower it, but beef is good to balance the flavor.

The best kimchi is the one my mother makes! + Show Spoiler +
No joke!
Kimchi is a drug that makes you slowly addicted without you noticing. I have read about a foreign man (journalist?) who was in prison in North Korea, and the first thing he told his wife when he came out of prison was that she should learn how to make kimchi.

To the shin ramen: Don't forget to crack an egg and add it to the ramen at the end, not too early, but also not to late, so that it doesn't stay glibberish. It will completely change the taste of the ramen (to the better). And if you like to, add some Emmentaler cheese (but not other cheese, only Emmentaler or something similar, else you will ruin it).

Radish kimchi and cabbage kimchi is usually the standard fare. The H-Mart I go to stocks either Tobagi kimchi in a large bulk bag or glass container, though thats probably because Tobagi is a NYC brand?

I think...

edit: I've tried kimchi lettuce, that was a unpleasant surprise.

Kak-du-Gi is the best type of kimchi imo. They are cubes of radish which are awesome with rice, rice and soup, curry rice. *salivating*

I want to get the cabbage kimchi. So I'm guessing that Tobagi is the best brand of kimchi to get then? Alright, if anyone else has any other thoughts and ideas before I leave for the store, please let me know. I'm really interested in trying stuff that tastes good =P

For drinking: Pocari Sweat, Milkis (yes, same name like our lovely writer, but it may be to sweet)
Jinro (uhhh, didn't know that he named himself after a soju brand? Now you know it!)
And for digesting obviously this:

I buy it from a local corner store run by Koreans, the "we sell kimchi" sign is written in Korean. I don't know where they get them as there are no labels on the containers, but they taste amazing, best I've had outside of Korea.

Moral of the story: try to find a corner store run by Koreans and ask!

Probably they made it themselves, homemade is always the best.

get something else to go with it

its just that just kimchi and rice is like the equivalence of bread and water; its just plain ahaha.
idk if youre vegetarian or not but
my suggestion is bulgogi, korean ribs or anything that's meat :D

EDIT: ask the clerk or whatever for suggestions?
because you cant get everything people are gonna suggest here at the store there.

Once you get your Kimchi and your rice, go to a Korean-ish area and find a meat store (it shouldn't be too hard). Ask for 1/2kg of Samgyupsal, or a pound I guess in American terms. Should be pretty cheap, like less than $10.

Go home, cook it and eat all of it together.

So much truth to this. Spaghetti and kimchi sounds nasty too, but it's worth a try. Seriously. If you're adventurous enough to eat kimchi anyways, try it with spaghetti.

I think kimchi might just go well with italian in general. I recall lasagna + kimchi being pretty decent as well.

If you're at the Korean market, get yourself some classic KBBQ.

Just got back from the Korean market and got a jar of kimchi. I'm eating right now with rice, and its pretty damn good. There were three different brands of kimchi (the normal cabbage one) to choose from. I chose the one that was the most red and it tastes really good (I wish it were more spicy though). Next, I need to try it with some meat.

Kimchi Craving is now satisfied. Thx TL.

Haha to the OP; I make kimchi from home I'll see if I can actually find my grandmothers old recipe somewhere.. Usually I guestimate it though. ^^

For good things to eat Kimchi with, you should try a korean dish- kimchi fried rice. I'm sure you could google it.

The kind you want is bae-chu kimchi, which is the cabbage kind, red sauce, cut up in to squares as you saw in the picture with the pizza.
