Sadly this is how most of if not all of the successful Protoss play, in a tournament setting you just simply cannot rely on straight up solid play as a Protoss. Personally I feel like Protoss are forced to rely way too much on mind games and tricky antics if they ever hope to take a series from top tier opponents.

Hopefully sarcasm. This is not extended series. It's standard double elimination and many tournaments do it (IPL4 is a good example with Squirtles near comeback).

They don't HAVE to follow the standard double elimination format, they could make fans happy and make the finals forcibly at least 5 games.

You mean how this could be over in four games? That's more of a question of whether or not a double-elimination tournament should have a WB advantage in the Grand Finals, rather than the implementation of such an advantage (2x best-of-whatever with WB winner only needing to win one series, or MLG's solution with extended series).
