Its versatile as long as you don't know what you're doing. Once you know how to actually play the game its somewhat basic with very few actual combat options without gimping yourself intentionally. Given FF7 is pretty popular people know how to play the game and realize the flaws.
That said every other FF but FF9 and the 13 series is exactly the same so its not too much to complain about
I certainly don't think so, at least not with some numbers changes and creative battle design. If you've ever tried something like gjoerulv's hardcore mod with fastest active ATB, where you have to manage HP, MP, barrier timers, buffs/debuffs, elemental damage, items, and damage output patterns, there are definitely enough things going on to keep things interesting.
Granted, pre-battle setup and understanding enemy AI will always play a large role, and not everyone is going to enjoy dying to a boss the first time and having to figure out how to beat it, but the elements of turn-based combat in FF7 suffice to present interesting and challenging gameplay, if that's the goal. Vanilla FF7 definitely suffers from being too easy, and the default speed/ATB settings should've probably been faster, but that's not a criticism of the combat system itself.

you could do a bit if number crunching and get really powerfull combinations, but the actual combat was dull. turn based games are fun because you can think multiple turns ahead and prepare against what the enemy throws at you and lay traps to outsmart him. the ff games have very little of it and the most of tactical gameplay you get is when you exploit weaknesses of your enemies, but i never considered it as very interesting to use a firespell on an enemy made of ice.

The combat System wasn't the Problem. You getting way too strong too fast was... My Cloud could basically solo the game (aside from the weapons) and Bosses, especially towards the end, never lasted longer than a handfull turns... If they can fix this the combat system has MUCH potential. It won't become as deep as a System like Xcom or the likes but it has more potential than FF7 "used".

The game gives Cait Sith an instant kill every boss / encounter button which is stupidly easy to pull off it doesn't really get easier than that
I agree that making it harder would at least help though (Although it'd still end up being powersoul or cait sith spam)

yeah but that isnt in any way connected to the story. for all he said they could just fundamentally change the gameplay (i.e. you only play cloud in an action rpg fashion) and still tell the exact same story, just with a different spin to it.

you can tell she is capable of a realistic style when she says "its a good sign". but the fucked up pacing and unrealistic dramatism is still there

I can kinda attest to that. FFVII was something of a novelty for me when I first played it, I didn't know a game could last 100 hours. It was simply an overwhelming experience. But the game stood its test of time because it was so rich in thoughts and details. Still years later (even now?) people are discovering new things about it, which is a testament to the effort the developers have put into it.
The best frame of reference for how ambitious the remake is going to be is probably the FF4 DS/iOS/Android remake. From a gameplay perspective, it's not a radical reinvention of the formula (i.e. it's still an ATB-based JRPG with every character having the same core moveset), but adds several new gameplay mechanics (e.g. in FF4, learning new skills and mixing and matching what you can use i combat) and significantly rebalances every major fight to keep things fresh for people who know the original front-to-back. From a story perspective, there's some more exposition on things due to the evolution of the medium, but not any major retconning or rewriting.
I just hope they keep the simplicity of turn based game play like they had in FF7--- none of this action combat crap like they've done in more recent FF games
